Unit 2.1 – food analysis
Nutrients – substances that organisms need to live, grow and reproduce
Carbohydrates - organic compounds (e.g. sugars) that are the body's main source of energy
amino acids - organic molecules that are building blocks of proteins
proteins - complex organic molecules connected by peptide bonds
fats/fatty acids - organic compounds that consist of carbon, hydrogen and oxygen, mostly insoluble in water
raw food – unprocessed, uncooked, natural food
food energy value - energy obtained from carbohydrates, proteins, fats
Nutritional value - information about the energy nutrients contain in food
Processed food - food that has been changed during preparation
perishable food - food that decays quickly
malnutrition - lack of nutrition caused by insufficient or unsuitable food
spoilage - decaying of food
shelf life - period for which food is suitable for use/after which its quality cannot be guaranteed
Digestibility - how easily or how much of food can be absorbed by the body
Pathogen - an organism/agent that causes disease
Protected Designation of Origin - EU label used for food produced in specific geographical area
Abundance – spousta, hojnost, nadbytek
Bulk - většina, velký objem (to bulk – hromadit)
Scrutiny – podrobné zkoumání, pečlivý dohled
Conformity – soulad, shoda
Instance – případ, příklad
Streamline – zefektivnit, zeštíhlit
Compliance – vyhovění, dodržování
Miscellaneous – rozmanitý
Contamination, impurity – adulteration
