Recipe for a classical British dishHere is the recipe for making steak and kidney pie.
To serve 5-6 people, you will need the following ingredients:
Imperial measurement
Metric measurement
2 lb. stewing steak
1 kg. stewing steak
4-6 oz. ox kidney
100-150 g. ox kidney
seasoning

1 oz. flour
25 g. flour
1 oz. fat
25 g. fat
1 pint stock
550 ml. stock
8 oz. pastry
200-225 g. pastry
a little milk to glaze

If you want to, you can also add a few mushrooms.
This is what to do:
1. Cut the meat into I inch (about 2.5 cm.) cubes and roll these in the seasoned flour.
2. Fry the meat in hot fat for a few minutes, then gradually blend in the stock and
continue to cook until the mixture has thickened slightly.
3. Put a lid on the pan, lower the heat and simmer for approximately 11⁄2 hours.
4. Allow the meat to cool and then lift the meat into a dish with a little of the gravy
– save the rest of the gravy to serve with the pie.
5. Roll out the pastry and cover the pie. Brush with a little milk.
6. Bake in the oven at 450 degrees Fahrenheit (230 degrees Centigrade) for 10
minutes, then lower the heat to 400 degrees Fahrenheit (200 degrees Centigrade)
and cook for a further 20-30 minutes. Serve hot with vegetables.
