Food in Scotland, Wales and IrelandThe national dish in Scotland is still haggis.
This consists of the innards and offal of a sheep
chopped up with spices and cooked in a sheep’s
stomach. It is served with mashed turnip.
Wales is well-known for different dishes. One
is called Welsh rarebit which is melted cheese
and a little mustard and tomato on toast.
Another is laver bread made of seaweed found
in the south west of Wales
which is mixed with oatmeal, formed into small cakes
and fried in bacon fat. It is usually served with bacon. If you are in Wales, you will
certainly find crempog on the menu. These are Welsh pancakes which are sometimes
covered with meat or fish and made into a savoury sandwich.
Perhaps the best known Irish dish is Irish stew which traditionally consisted of goat
but more commonly today of lamb as well as potatoes. Local people say there is no
definitive recipe for Irish stew as any available vegetables can be added. Instead of
water, people often add the well-known beer called Guinness.
